Spinach Artichoke Tortellini Salad Recipe


Spinach Artichoke Tortellini Salad is a fun and delicious pasta salad that's perfect for parties!


SERVINGS: 6 SERVINGS – 1 20-ounce package tortellini – 3 cups packed baby spinach – 1 14-ounce can artichoke hearts, rinsed and drained – 1/2 cup freshly shredded Parmesan cheese – 1/3 cup olive oil – 3 tablespoons red wine vinegar – 1 1/2 tablespoons fresh lemon juice – 1 clove garlic minced – 1-2 teaspoons fresh thyme leaves chopped (optional) – Salt and pepper to taste



Follow the directions on the package to cook the tortellini and then set them aside to cool.


Step 1

Cut up the artichoke hearts and baby spinach and put them in a large bowl. Shred the Parmesan cheese and add it.


Step 2

Whisk garlic, thyme, red wine vinegar, olive oil, and lemon juice in another bowl. Season with salt and pepper. Taste and adjust as needed.


Step 3

After cooling, add tortellini to the bowl with spinach, artichokes, and cheese. Sprinkle and mix.


Step 4

The pasta salad should be covered with dressing and mixed well. Chill until serving time.
