Molasses Cake Recipe

Deliciously rich, soft, and moist, molasses cake is packed with tons of comforting, warming spices, and a hint of zesty lemon.

– ½ cup (118 ml) molasse – ½ cup (118 ml) hot water – 1¼ cup (150 g) all purpose flour – ¾ teaspoon baking soda – 2 teaspoons ground ginger – 1 teaspoon ground cinnamon – ¼ teaspoon ground clove – ½ teaspoon salt – ½ cup (100 g) light brown sugar – 1 lemon, zested – 4 tablespoons (57 g) unsalted butter, room temperature – 1 large egg, room temperature

Bake at 350 F (177 C). A 9 x 9 inch (23 cm) cake pan should be lightly greased and lined with parchment paper.

Heat the water in a microwave-safe cup until it is hot, then stir in the molasses until it is completely blended and smooth.

All-purpose flour, baking soda, ground cinnamon, ginger, cloves, and salt should be mixed well in a basin.

Mix brown sugar and lemon zest in a large bowl until moist sand-like. Whip butter and lemon sugar until frothy. It takes 2-3 minutes at medium pace.

Add the egg and warm molasses water on low and beat until smooth. Mix dry and wet ingredients just until mixed.

Fill the pan with molasses cake batter evenly. Bake the ginger cake until a toothpick inserted into the center comes out clean or with a few moist crumbs, 28–32 minutes.

The pan should cool for 10 minutes. Use parchment paper to gently remove the molasses spice cake from the pan. Put on a platter or serve from the pan.
