Lobster Cheddar Bay Biscuits Recipe

This cheddar bay biscuit copycat recipe always makes flaky, delicious biscuits! Year-round, serve biscuits with your favorite soup or salad. 

– 2 cups all-purpose flour spooned & leveled (250 grams) – 2 teaspoons granulated sugar – 2 teaspoons baking powder – ½ teaspoon baking soda – ¾ teaspoon salt – ½ teaspoon garlic powder – ½ cup cold unsalted butter cubed (115 grams; 1 stick) – 1 cup shredded cheddar cheese (100 grams) – 1 cup cold buttermilk (240 ml)

Recipe for biscuits: Start oven at 425°F (218°C). Use parchment or silicone to line a large baking sheet. Mix flour, granulated sugar, baking powder, baking soda, salt, and garlic powder in a large bowl.

Pea-sized butter bits are made by cutting cubed butter into dry ingredients with a pastry cutter. Shredded cheddar is added. Turn in buttermilk until barely combined (overmixing makes biscuits tough).

Add 1–2 teaspoons (15–30 ml) buttermilk to dry dough. Place ¼ cup of dough on the baking sheet, leaving space between each mound. For this step, use a nonstick measuring cup or large ice cream scoop.

Top each biscuit with buttermilk. Bake biscuits 15–20 minutes until lightly browned and cooked through (a toothpick should come out clean). Allow baked products to cool while topping.
