Loaded Baked Potato Salad Recipe


This loaded baked potato salad is a fun twist on classic potato salad and a great party side!


SERVINGS: 8 SERVINGS – 3 pounds red potatoe – 3/4 cup sour cream – 3/4 cup miracle whip or mayo – 1 cup shredded cheddar cheese – 8 slices bacon cooked and crumbled – 2-3 tablespoons chopped fresh chive – Salt & pepper to taste



Put potatoes in a large pot with enough water to cover and 1 teaspoon of salt (if desired). 


Step 1

Let them boil, then reduce heat and cook for 15-20 minutes until they can be pierced with a fork (depending on potato size).


Step 2

Drain and cool potatoes.Slice the cooled potatoes into bite-sized pieces and place them in a large bowl.


Step 3

Mix well sour cream, mayo, cheddar, bacon, and chives. Salt and pepper to taste.Keep chilled until serving.
