French Silk Pie Recipe

French silk pie is easy to make yet looks stunning. A creamy, fluffy chocolate filling is topped with whipped cream and chocolate shavings in a buttery pie crust. 

– 4 large egg – 1 ¼ cups granulated sugar (250 grams) – 8 ounces semisweet chocolate bars roughly chopped (226 grams) – 1 ½ teaspoons pure vanilla extract – 1 cup (2 sticks) unsalted butter softened to room temperature (230 grams) – 1 ½ cups cold heavy whipping cream (360 ml) – 2 tablespoons confectioners sugar (15 grams)

To create pie crust, preheat oven to 400°F (204°C). Roll pie crust to 12 inches. Slip the dough into a 9-inch pie plate 1.5–2 inches deep.

Decorate edges and trim excess dough. Refrigerate dough for 10–15 minutes to relax. Fork-prick the pie crust bottom to prevent bubbling.

Cover the pie dough bottom and sides with foil or parchment. Fill with dried beans or pie weights.With pie weights, bake 15 minutes at 400°F (204°C). After baking, remove parchment and pie weights.

Bake the crust for 15–20 minutes more to brown and cook. A store-bought pie crust may save time. Cool completely before filling.
