One factor may be salt-induced water retention. Scientists hypothesizes that sodium intake changes gut microbiota and bacterial sulfide generation. 

Up to a third of U.S. individuals and 90% of those with IBS experience bloating. Extra gas in the intestines causes bloating.  

Gut bacteria break down fiber to produce gas. Some data suggests salt causes bloating.  

High salt intake caused bloating in participants. Compared to a low-fiber control diet, the high-fiber DASH diet increased bloating in trial participants.
