Cranberry Tofu Salad Sandwich Recipe

Kristen Carli, MS, RD's healthy cranberry tofu salad sandwich will up your lunchtime sandwich game. This creative and healthy sandwich filling uses cranberries and tofu to elevate classic fillings.

Ingredient

– 12 slices whole wheat seeded bread – 1 (16-ounce) block super firm tofu – ½ cup dried cranberrie – ¼ cup red onion – ½ cup diced celery – ½ cup mayo – 2 tablespoons Dijon mustard – juice of 1 lemon – 1 teaspoon salt – ½ teaspoon pepper

Direction

Please toast the bread.Take the tofu and break it up with your hands.

Mix crumbled tofu, dried cranberries, red onion, celery, mayo, mustard, lemon juice, salt, and pepper in a large bowl.
