Carrot Cake Sandwich Cookies Recipe


Creamy cream cheese frosting on 3-ingredient carrot cake cookies. Beautiful carrot cake sandwich cookies for spring and Easter!


SERVINGS: 12 SANDWICH COOKIES CARROT CAKE COOKIES: – 1 box (15.25 oz) carrot cake mix – 1/3 cup oil – 2 large egg CREAM CHEESE FROSTING: – 1/4 cup butter , softened (half a stick) – 4 ounces cream cheese , softened – 1 cup confectioners' sugar – 1/2 teaspoon vanilla extract



Preheat oven to 350°F. Prepare a large baking sheet with parchment or silicone mat.


Step 1

Mix carrot cake mix, oil, and eggs in a large bowl. Drop 2 tablespoons of dough on the baking sheet using a cookie scoop. Bake 11-12 minutes.


Step 2

Remove cookies from oven and cool on baking sheet for 10 minutes. Remove cookies from baking sheet and cool on wire rack.


Step 3

Whisk butter and cream cheese in a stand mixer with the paddle attachment or handheld mixer until smooth. Mix confectioner's sugar and vanilla well.


Step 4

After cooling, evenly frost half the cookies' flat sides. Top the frosting with the other half of the cookies, flat side down.
