Preheat oven to 350°F (177°C). Spray each 12-count muffin pan cavity with nonstick cooking spray and set aside.

Combine the baking powder, ground cinnamon, old-fashioned rolled oats, and salt in a large mixing bowl. Put aside.

Whisk the mashed banana, milk, honey, egg, and vanilla extract in a large bowl until mixed. Mix dry ingredients with wet ingredients until completely blended.

Divide the mixture evenly between the 12 muffin cups. Oatmeal cups should be set and solid after 20–25 minutes at 350°F (177°C).
