Turn the oven on to 350°F. Lightly mist a 12-count muffin pan with nonstick cooking spray and reserve.

In a large bowl, add the oats, cinnamon, baking powder, and salt. Mix until thoroughly incorporated.

Combine milk, eggs, honey, brown sugar, and vanilla essence in a separate basin. Mix the dry and wet components until well blended (it will be moist).

Spoon mixture into 12 muffin cups. Make sure each cup has equal oats and liquid. Blueberries should be uniformly divided and gently pushed into oatmeal cups.

Oatmeal cups should be solid after 25–27 minutes at 350°F. Cool 5-10 minutes in the pan after removing from the oven.

After taking the oatmeal cups out of the pan, take them to a wire rack to cool completely.

Instructions for storage: Keep oatmeal cups in the refrigerator for up to five days by placing them in an airtight container.
